There are many types of truffles, but not every type is culinary interesting. Each season has its unique type and its highlights within the season. For this reason, we are able to offer fresh truffles throughout almost the entire year.
Summer Truffle is the most well-known and accessible type. The peel is wart-like pyramidal. The fruit has a soft brown-white colour, comparable to the colour of a hazelnut. Too white fruit indicates immaturity. The scent is delicate and pleasant, vaguely reminds of porcini.
Autumn Truffle is closely related to the Summer Truffle, but its flavour and scent are noticeably stronger. The peel is coarser and more pyramidal compared to the Summer Truffle. The fruit is darker and marbled, more towards brown-yellow.
Winter Truffle, also known as “Black Truffle”, is a highly exclusive truffle with extremely delicate accents, with a fine wart-like peel, noticeably smoother than the Summer Truffle. Its veins are black-brown, almost purple. The scent is pleasantly aromatic and explicitly present. Its taste is exquisite and slightly sweet. Together with the white truffles this is the most treasured truffle in the high-end gastronomy.
White Truffle, also known as “il bianco pregiato” (the precious white) or Alba Truffle, is a very rare truffle type. This “vegetarian diamond” is the most valued truffle and is one of the world’s most exclusive delicacies. The peel is smooth and white-yellowish with shades of hazelnut-brown. Its scent is unmistakably delightful. Its unforgettable taste has hints of garlic. Gastronomically, the white Truffle is the most beloved Truffle.
Bianchetto, also known as “Spring Truffle”, resembles the White Truffle at first, but is a unique type. In Italy, the “Mazuolo” is named after the month of March. The peel is smooth with varying colours, from ochre to dark orange, sometimes almost rusty brown. The fruit is off-white to red-brown with wide veins. Its scent is noticeably garlic like and penetrating. It is generally a small truffle, average between 15 - 20 grams. The Bianchetto is especially suitable for usage in salsas or in butter.
